Cappuccino Gelato
A cappuccino-inspired coffee gelato: cream-based (milk and cream), rebalanced to highlight milky notes while keeping an intense, aromatic coffee profile.

Coffee gelato is a timeless classic, and I’m a big coffee lover in all its forms, with its unmistakable fragrance and aroma.
To create this recipe, we started from a straightforward coffee gelato. What I then tried to do was rebalance it so the milky notes come through more, adding extra creaminess so it evokes a cappuccino more than a pure coffee.
Expectations were high, because every morning I make my cappuccino at home with my beloved Gaggia Classic espresso machine, which you can see below in action while I was preparing the gelato. Luckily, this recipe lives up to it, and I feel confident sharing it with you!

Method
Tested with an 800 g batch using the Cuisinart ICE-100.
- Prep: mix all dry ingredients together. Put the liquids (milk, cream, and invert sugar) in a saucepan.
- Pasteurize: heat the milk and cream slowly until you reach 85°C. Meanwhile, add the powders little by little, dissolving well to avoid lumps. Optionally, around 40°C you can add ½ tsp vanilla extract for a fresher, lighter profile.
- Once at temperature, add the espresso and cool the mix down.
- Ageing: 12 hours at 4°C. The coffee may separate into two phases during ageing, possibly due to a lack of emulsifiers. If that happens, whisk vigorously before churning.
- Churn: 50 minutes with the Cuisinart ICE-100; draw temperature about -6.5°C.
- Freezer time: at least 8 hours to reach serving temperature.
Final notes & tasting
- Overrun: 60%, a bit too high for the intended result.
- Texture: creamy and airy.
- Melt: slow; the gelato stays firm for a long time.
The tasting was very interesting. It’s a highly aromatic gelato, with strong initial notes and a pleasant aftertaste. You can clearly smell the coffee, but on the palate it’s softened by the milky notes. A gelato with real character!
Conclusions
A gelato with complex aromas and fragrance—this was a very interesting experiment. It conveys the idea I wanted to capture, and it’s a flavor that lingers in your memory. Highly recommended!
That said, we’re not fully satisfied with the texture. Unfortunately, we had to churn it longer to reach the draw temperature, and the overrun increased too much, making it airier than the creamy, dense texture we were aiming for. We’ll try again with a smaller batch. We also recommend using an emulsifier (if you have one) to prevent phase separation (it happened to us once) and to achieve a more uniform creaminess.
